Most food processing companies have had to come to grips with documenting the food fraud risk assessment of their raw materials, even if only to pass their GFSI audit. Over the last 2 years a lot of companies whilst undertaking the annual review of their food fraud risk assessment, they have decided to take the process seriously and make changes to the application of the controls, particular within their supply chain.
This webinar focuses in on the practical real-world controls that can be applied to drop the risk of food fraud within your raw materials.
In 2016 Clare developed a method of ranking raw materials at risk of fraud and has been undertaking consultancies and training using this method since then. The method was based on work she had undertaken on a EU Government Research project (FP6- 518451) between 2006 – 2008: 'Developing a Stakeholders Guide on the vulnerability of food/feed chains to dangerous agents & substances' & developed a method to assess the farmed Atlantic Salmon food supply chain for vulnerabilities to food safety contaminants, loss of traceability & failure to detect contaminants. http://www.sigmachain.eu/index.php?page=15
From 2010 to 2015, Clare trained North American seafood processors in the 'Risk Assessment of the Supply Chain' utilizing a number of different risk assessment methods and so used this knowledge to identify potential food fraud within the raw material supply chain. To date Clare has personally assessed approximately 800 raw materials using this method.
